Mixed Berry Chai Quinoa Grits

Preparation Time: approximately 5 minutes

Cooking Time: 20 minutes

Serving Size: ½ cup mixture (makes about 6-8)

Ingredients

2 cups water

1 tsp salt

4 TB chai powder mix

1 cup quinoa, washed for 30 minutes

1 cup berries, mixed (frozen/thawed or fresh): blackberries, raspberries, blueberries

1 tsp lemon juice

¼ cup raw sugar

½ cup skim milk, almond milk, or soymilk

1 TB cornstarch

Directions

Combine water and salt in saucepot; bring to a boil. Add chai and quinoa; stir. Cover, bring to a simmer (medium-low heat), and cook 15-20 minutes (depending on package instructions). Stir occasionally.

Add berries, lemon juice, and raw sugar. Continue stirring until well combined. Cover and let cook 5 minutes, stirring FREQUENTLY (this mixture will become sticky and can burn on pot bottom if not stirred often enough).

Meanwhile, combine milk with cornstarch, mixing completely. Add half of this to quinoa mixture and continue stirring until mixture begins to thicken and reduce in volume. Add remaining half of milk mixture, continue to stirring to prevent sticking/burning until mixture is thick so that a spoon can stand straight up when placed inside.

Will thicken as it sits. Let stand 5 minutes before serving.

Storage and Turn-out

Serve hot. May garnish with fresh berries, lemon flavored nonfat Greek yogurt (shown).
