Lime-Marinated Turkey Tacos
Preparation Time: 15-20 minutes
Serving Size: 2 Tacos, Serves about 4
2 Slices on The Slice Plan
8 flour tortillas
2 cups turkey, cooked/shredded, white meat preferred
¼ cup lime juice
1 avocado, sliced
2 radishes, julienned
1 cup shredded red cabbage (not pictured)
½ cup queso fresco, crumbled
optional cilantro sprigs
optional hot sauce
Marinate the turkey by mixing it with the lime juice; set aside for 15-20 minutes (you may do this overnight as well). Drain off juice. Reheat, if desired.
Warm tortillas over stovetop until softened or in microwave for 10-15 seconds. Top with portions of marinated turkey breast, avocado, radish, cabbage, cheese, and optional items to accommodate 8 taco shells.
Turn-Out and Storage
Serve turkey tacos hot or at room temperature. A great twist on Thanksgiving leftovers!
Marinated turkey can be stored for up to 3 days under refrigeration.
