Crab Stuffed Artichokes

Some people have a hard time enjoying artichokes. Others are intimidated by the cooking methods. In this recipe, we teach you how to cook an artichoke easily and when stuffed with the crab mixture, makes for a delicious dish! Definitely worth a try for those who are new to artichokes, want a simple recipe, or looking for an easy dish to accompany a plethora of sides.

Preparation Time: approximately 10-15 minutes

Cooking Time: approximately 25-45 minutes

Serving Size: 1 stuffed artichoke, Serves approximately 2

Ingredients

2 artichokes

4 oz crabmeat, lump

2 TB crème fraiche or light sour cream

1 TB lemon zest

1 TB chives, chopped

1 TB olive oil

½ tsp salt

½ head frisee greens, washed

Directions

Cover the artichokes with water in a large pot and bring to a boil. Reduce the heat to a simmer and cook for 25-45 minutes or until the outer leaves of the artichoke can easily be pulled off. Set aside to cool.

Once cooled, cut the artichokes in half and remove the inner "heart" and bristles with a spoon.

Meanwhile, in a bowl, combine crab, crème fraiche, lemon zest, chives, oil, and salt. Mix well and season to taste. Add black pepper if desired.

Turn-Out and Storage

Stuff each artichoke in half with 2 TB of the crab mixture. Top with frisee greens.

The artichokes and crab mixture can be stored separately for up to 3 days under refrigeration.
