Strange question, do you have any healthy casserole recipes or even slow cooker recipes. Now with the little guy its hard to cook the separate parts to meals. We love quinoa and I can't seem to come up with easy meal ideas. I want to be able to use whole grains, proteins and vegetables all together. I don't get a whole lot of time to do long recipes and preps anymore now that the baby is fully mobile. We want to start eating healthy now too to lower cholesterol etc. Thanks a million Zach!
There are four recipes on my site that I think would be great for you:

I think it's important to mention a few things when cooking for your family in general. There are a lot of ways for protein to be included in the meal outside of meat. These include beans, lentils, and even nuts. Including them in family meals is a great way to add lean protein! In any of the recipes I gave you, however, you can easily add meat to them if you choose.
When preparing a meal ahead of time, make sure to properly wrap it for storage. The recipes I provided for you may be prepared and frozen ahead of time or placed in the refrigerator in an airtight container or in the slow-cooker dish wrapped tightly. Try to include fresh garnishes and finishing touches in these recipes (i.e. fresh scallion with the Caribbean Style Chicken) to add a freshly made feel to the dish as well as texture not normally found in these types of dishes.
I hope these recipes serve you well. Good luck and Happy Eating!
