Vegan Peanut Butter Brownies
Cooking Time: 35 minutes
Makes about 10-12 Brownies
Serving Size: 1x1 inch square (1 Slice)
15oz black beans, low sodium, drained
¾ cup oat flour
¾ cup applesauce
2 TB flax seed, ground, mixed with:
3 TB Peanut butter
¾ cup cocoa
1 tsp salt
1tsp baking powder
1 ¼ cup sugar, raw OR sweetener substitute
1 tsp vanilla extract
Preheat oven to 350 degrees. Drain and wash black beans under cool water. Prepare flax egg - place 2tbsps of ground flax with about 1 tbsp of water - mix and let sit until it forms a thick mixture, add more water if necessary. Place all ingredients into food processor and mix until mixture is uniform and doesn't contain lumps. Place into an oiled pan and bake at 350 degrees for about 35 minutes.
Enjoy these deliciously moist, gluten free, and nutrient dense brownies- they're a great source of fiber… You'll never know theres a black bean in there! This will help you live deliciously!
